ORGANIC VITICULTURE
The wines
The production of organic wines follows a green ethic, favouring the land and the use of traditional and natural agricultural techniques, excluding chemical fertilisers and pesticides. Vinification begins with the manual harvesting of the grapes at dawn and the careful selection of the bunches, which arrive intact at the winery. The bunches are gently pressed to extract the noblest and most aromatic components, then the must ferments and macerates at a controlled temperature.
